We absolutely love spending time in the nature! After a long week with deadlines and school runs, there is nothing more calming and life-affirming than to spend time outdoors. We love to go for long walks in “Dyrehaven” north of Copenhagen with stunning scenery and wild deers walking around.

But with all the fresh air and hiking, you also need a break at some point. 🙂 This banana peanut cake suits a beautiful Autumn day perfectly and will definitely provide renewed energy for everyone on the trip. The recipe for this delicious Banana Peanut Cake we got from Nicolas’ bonus sister Julia, who is very passionate about baking and she always manage to impress us with unmatched cakes. Fortunately for us, she is happy to share her new ideas and flavor combinations!

Recipe

You will need:

Banana cake:
• 300 g soft butter
• 400 g muscovado sugar
• 7 egg
• 6 ripe bananas
• 500 g wheat flour
•  2 tsp baking soda
• 1/2 tsb salt
• 200 g dark chocolate

Chocolate frosting:
• 200 g dark chocolate, 70%
• 100 g butter
• 50 g  powered sugar

Filling:
• Peanut butter, crunchy

Decoration:
• Peanuts

Tip!

If you’re a big fan of peanuts you can add some extra on the layer in between.

How to:

Banana Cake:

  1. Preheat the oven to 175°.
  2. Cover the bottoms of two 18 cm round baking pans with backing paper and butter the sides.
  3. Mix all dry ingredients in a large mixing bowl.
  4. In another bowl, whisk the eggs until light and airy. Mix together with the dry ingredients.
  5. Mix butter and sugar and add to the batter. Stir until combined.
  6. Mash the bananas with a fork in a bowl, and whip the banana mash into the batter.
  7. Chop the chocolate roughly and carefully stir it into the batter.
  8. Divide the batter evenly between the baking pans and bake for 45 minutes. With a toothpick check that the cakes are baked. Leave to cool for 15 minutes before removing them from the baking pans.

Chocolate Cream:

  1. Gently melt the chocolate over hot water and then add butter.
  2. Add the powdered sugar gradually and stir until there are no lumps.

Assemble:

  1. Cover one of the banana cakes with peanutbutter (its up to you how much) and add the chocolate cream on top.
  2. Put the other banana cake on top and cover it with the rest of the chocolate cream.
  3. Decorate with peanuts.
