Delicious, chilled juices and sweet, tasty smoothies – what’s not to like? Especially now when the summer heat has finally shifted over the Scandinavian latitudes. The variations are endless, the nutrition factor is high and it has never been easier to get our children to eat a whole handful of fresh spinach without turn their nose, but instead be delighted by its taste and then, yes, this is true – ask for more!!

Recipes

Apple & mint juice

Serves 1

• 3 green apples
• 50g baby spinach leave
• 1cup mint leaves
• 1 lime

  1. Peel the lime.
  2. Add all ingredients through juicer.
  3. Add some ice cubes and serve.

Ginger shot   

1 bottle

• 300g ginger, peeled and sliced
• 50-100ml caster sugar
• 750ml water
• 2 lemons

  1. Bring water to boil.
  2. Let the peeled and sliced ginger simmer for approx. 30 minutes.
  3. Strain.
  4. Stir in the sugar and leave to cool.

 

Raspberry smoothie  

Serves 1

• 150 g frozen raspberries
• 1-2 dates
• 1 banana, frozen
• 1 tablespoon flaxseeds
• 1 handful of ice cubes

  1. Add all ingredients to blender.
  2. Mix until smooth.
  3. Serve immediately.

Beetroot juice

Serves 2

• 1 large beetroot
• 2oranges
• 1 lemon
• 30g baby spinach leaves

  1. Peel the beet, oranges and lemon.
  2. Add all ingredients through juicer.
  3. Add some ice cubes and serve.

Pineapple & ginger smoothie     

Serves 2

• 150g fresh or frozen pineapple, cut into pieces
• 250ml low fat plain yogurt
• 2 cm piece fresh ginger, peeled and minced
• ½ teaspoon ground cinnamon
• 1 handful of ice cubes

  1. Add all ingredients to blender.
  2. Mix until smooth and serve immediately.
