If you google kale you will be pleasantly surprised to read about all the amazing benefits you will get by eating it. Kale includes healty nutriets like calcium, omega 3 and flavonoids and is said to be able to prevent both cataracts and cancer. According to the Center for Science in the Public Interest in Washington, D.C. kale is the most nutritious vegetable.

An additional plus is of course that it tastes really good. Everything from kale chips to kale salad or as here where we use it for a pesto. This pesto is perfect to serve togheter with pasta or just as a dip for your crostini. We’ve choosen to serve it with some tasty rye bread with high fiber content. Absolutely perfect for your luck box. Bon appetite!

Rye bread with pesto and kale

Recipe

You will need:

Serves 2:
• 4 slices of rebreed
• ½ red onion, thinly sliced
• 8 slices of cucumber
• 4 slices of smoked turkey
• Red cabbage, thinly sliced
• For the kalepesto
• 120 g chopped kale leavs, stems removed
• 1 tbs sea salt
• 3 tbsp extra virgin olive oil
• 140 g walnuts
• 1 cloves garlic, chopped
• 1/4 cup Parmesan cheese, grated

 

How to:

For the kale pesto:
1. In a food processor (or with a hand mixer) combine the kale leaves and salt. Pulse until the kale leaves are finely chopped. With the motor running, drizzle in the olive oil. Scrape down the sides og the processor. Add the walnuts and garlic and process again. Add the cheese and pulse to combine.

For the sandwich:
2. Lay 2 slices of rye bread on a cutting board and spread with kale pesto.
3. Top with red cabbage, onion, cucumber and smoked turkey.
4. Spread kale pesto on the remaining 2 rye bread slices and place spread-side down on top of the sandwiches.
5. Ready to be served.
