Tired of having the same breakfast every morning  and need some new inspiration? Try our oven baked oatmeal with banana. It’s warm, tasty and loaded with healthy energy and protein. Ok it needs about 20-25 min in the oven, but use the time wisely and get ready in the meantime. If you get any leftovers, it still tastes amazingly good when it’s cold and resembles almost an energy bar. Perfect for the lunch box or as a small afternoon snack.

Recipe

You will need:

• 2 bananas
• 2 eggs
• 2 dl/1 cup oatmeal
• 1 dl/0,5 dl almond or oat milk
• 1 tsp baking powder
• 1/2 tsp cinnamon
• 1/2 tsp cardamom
or
• 2 tbsp peanut butter
or
• 1 dl/0,5 cup raspberries
• butter for the baking pan

Tip!

We love to serve it with a good vanilla yoghurt.

How to:

  1. Heat oven to 200C / 390F.
  2. Mash one of the bananas with a fork and whisk together with the eggs.
  3. Mix all dry ingredients. If you choose cinnamon/cardamom for seasoning, add this now.
  4. Add the egg/banana batter and blend. If you choose raspberries for seasoning, add that now.
  5. Butter an oblong shaped baking pan.
  6. Pour in the batter.
  7. Divide the other banana into two and place it on top of the batter. If you have selected peanut butter as seasoning, add small dots of it on the batter.
  8. Bake for about 20-25 minutes.
