If the Christmas table is to be updated with just one simple dish, this fantastic Christmas Salmon would be our suggestion. We love to serve it with a salad or two and even though it is a little bit spicy, it still goes really well with all the Christmas classics. Recipe

You will need:

Serves 4-6

• 1 whole side of salmon  (about 1kg)
• 1/2 tbsp salt
• 2 teaspoons sugar

Crust:
• 2 egg yolks
• 3-4 tablespoons mustard
• 1 tbsp honey
• 1/2 tbsp ground ginger
• 1 piece finely chopped small red chili
• 2 finely chopped garlic cloves
• Pepper
• 1 dl breadcrumbs

How to:

1. Mix salt and sugar. Rub the salmon with the mixture. Wrap it in plastic wrap and refrigerate overnight.
2. Preheat oven to 200° C.
3. Crust: Mix all the ingredients except the breadcrumbs. Spread the mixture on the salmon and sprinkle over the breadcrumbs.
4. Place on a shelf in the centre of the oven, and bake for about 15-20 minutes or until the salmon is just cooked through and the crust is golden – or until til the salmons’s internal temperature is 56° C.
