These little delicious coconut bars a la Bounty are not only sweet and tasty but also a healthier alternative then the original. Be sure to make a double batch and store them in the freezer, so that you have a quick energy boost when fatigue is taking over.

Recipe

You will need:

Makes 10 pieces

• 500 grated coconut
1 cup coconut oil
1-2 tbsp honey
100 g  dark chocolate (70%)
2 teaspoons coconut oil

Decoration:
• Grated coconut / coconut flakes

How to:

  1. Mix coconut, coconut oil and honey in a food processor.
  2. Taste and add, if needed, more honey.
  3. Cover a 10×30 cm baking tray with baking paper.
  4. Squeeze out the coconut mixture in the mold and leave in the freezer for 1 hour.
  5. Melt the chocolate together with coconut oil over water bath.
  6. Cut the coconut mixture into oblong pieces and cover each piece with melted chocolate.
  7. Decorate with grated coconut and coconut flakes.
  8. Store in the freezer.
