This Fennel & Pomegranate salad is a fantastic color symphony and it is as good and tasty as it is beautiful. We like to serve it with e.g. chicken or salmon, but it also compliments the Christmas table perfectly, as an fresh and healthy alternative.
The combination of fennel and pomegranate is wonderful and it is definitely a salad that deserves to be on the menu more often.

If you can’t bother to seed the pomegranate – just go for the simple solution and buy ready-to-eat pomgranate kernels in a small box.

Recipe

You will need:

• 1 fennel
• 1 garnish apple
• 2 oranges
• 200 g mixed salad ex. arugula,
• 100 g chopped walnuts
Dressing:
• 4 tablespoons olive oil
• 1/2 tbsp apple cider vinegar
• 1 tbsp Dijon mustard
• 1 tbs freshly squeezed lemon juice
• 1 tbs of honey
• Salt & pepper

How to:

Salad:
1. Peel the oranges and cut the pulp into chunks.
2. Rinse and shred the fennel. Peel pomegranate seeds and place in a bowl. Rinse and shred the salad.
3. Roughly chop the walnuts.

Dressing:
1. Mix oil, vinegar, mustard, lemon juice and honey in a small glas. Season with salt and pepper.
2. Mix the salad, fennel and orange cloves in a bowl or on a beautiful dish. Roll over the dressing and top with pomegranate seeds and chopped walnuts.
