I guess we’ve said it before, but we, and especially our kids, are big fans of pancakes. At our households, pancakes are served in one form or another probably once a week. But since there should be room for some kind of cake or candy when the weekend comes, it is not that often we serve the sweet classic pancakes. Normally we make pancakes with oats or almond flour, but these cottage cheese pancakes are, against all odds (our kids don’t like cottage cheese), also a favorite. – We love to serve them with whipped coconut cream, berries and our Nut Crunch.

Recipe

You will need:

• 2 ripe bananas
• 4 eggs
• 125 g of cottage cheese
• coconut oil

For serving:
• Berries
• coconut cream, chilled
Nut Crunch

How to:

  1. Mash the bananas and stir in the eggs and cottage cheese.
  2. Heat a pan with coconut oil. Add small ladles of batter and fry on medium heat.
  3. Turn gently as they easily break.
  4. Whip the chilled coconut cream.
  5. Serve the pancakes with coconut whipped cream, berries and Nut Crunch.
