These are without a doubt our Kids All-time Favorite Cookies and probably the one thing we’ve baked the most over the years. Alexandra got the recipe from her sister many years ago and although the recipe is quit old it is still a favorite.
Our Kids Favorite Cookies are very simple, they are crunchy and sweet and no matter how many we’ve made, they are always the first to be “sold out” on the cake table.

Recipe

You will need:

• 5 dl / 2 cups wheat flour
• 1 dl / 0,5 cup sugar
• 2 teaspoon vanilla ekstrakt
• A pinch of salt
• 200 g cold butter cut into cubes
• 1 egg yolk
• 1 1/2 dl/1 cup of raspberry jam
1 dl / o,5 cup almonds or hazelnuts, chopped

How to:

  1. Whisk together flour, sugar, vanilla ekstrakt and salt.
  2. Add butter and combine until it resembles bread crumbs.
  3. Add egg yolk and mix dough quickly until it just comes together.
  4. Make a 20 cm sausage out of the dough.
  5. Roll the sausage in chopped almonds or hazelnuts until covered.
  6. Leave in the fridge for about 30 minutes.
  7. Set the oven to 175 C/325 F.
  8. Cut 0,5 cm thick cookies out of the sausage.
  9. Make a small hole with your finger and fill with raspberry jam.
  10. Place the cookies on a baking tray lined with baking paper.
  11. Bake for about 10 minutes, until cakes are slightly golden brown.
  12. Let cool completely.
