What could possible be better than sweet homemade heart-shaped cookies filled with red raspberry jam for Valentine’s Day? And they are as simple as good!

This is a perfect opportunity to have a good time and being creative with the kids in the kitchen, because if you don’t have a heart-shaped cookie cutter, we promise that the cookies taste just as good round or star-shaped. Or in a completely different shape….

Happy Valentine’s Day.

Recipe

You will need:

• 5 dl / 2 cups wheat flour
• 1 dl / 0,5 cup cane sugar
• 1 teaspoon vanilla ekstrakt
• A pinch of salt
• 200 g cold butter cut into cubes
• 1 egg yolk

•1 1/2 dl/1 cup of raspberry jam

Decoration:
• Powdered sugar

Tip!

Don’t have any cookie cutter? Use a glass and make round cookies. The taste will be the same 🙂

How to:

  1. Whisk together flour, sugar, vanilla ekstrakt and salt.
  2. Add butter and combine until it resambles bread crumbs.
  3. Add egg yolk and mix dough quickly until it just comes together.
  4. Leave in the fridge for about 30 minutes.
  5. Set the oven to 175 C/325 F.
  6. Roll out the dough about 2-3 mm thick.
  7. Cut out cookies with a heart shaped cookie cutter.
  8. Place the cookies on a baking tray lined with baking paper.
  9. Cut out a small heart on half of the cookies. These will be the top on the cookies.
  10. Bake for about 10 minutes, until the cakes are slightly golden brown.
  11. Let cool completely.
  12. Add a click of jam to the center of each bottom cake and spread it out.
  13. Put the top on – the cookie with a small heart cut out.
  14. Sprinkle with powdered sugar.
