Winterbreak = Hygge = Movie Night
Last week, homeschooling was finally replaced with “normal” school days here in Denmark. At least for the youngest children. Now, just a week later the kids are back home all week. Luckily this time, we don’t have to act as schoolteachers, as it’s just the school winter break.
Ski holidays or trips to warmer destinations are still something we can only dream of. So again we try to be creative and come up with fun things to do at home.
However, we have been really lucky to get even more snow here where we live. In fact, we haven’t had this much snow since 2015! Therefore, we still grab the opportunity to go sledding and building snowmen as much and as many as we can.
The other day, after sledding and drinking hot chocolate, Liva came up with the idea to invite the rest of the family to a Movie Night. We started popping (lot’s of) popcorn and mixing different flavor variations for seasoning. Some more successful than others. 😊 Don’t worry, we’re just gonna share the good ones.
Tickets were handed out and a movie was selected by the organizer herself. Thank god for Netflix – especially during corona time. Liva’s Movie Night was a huge success and appreciated by the whole family. We can’t wait to get an invitation to movie night again!
Recipe
You will need:
Basic Popcorn:
• 80g popcorn kernels
• 3 tablespoons neutral oil (e.g. coconut oil or sunflower oil)
Caramel:
• 125g sugar
• 25g butter
• 1/2 – 1 tablespoon salt
• 1/2 teaspoon baking soda
Chocolate:
• 100g dark chocolate
• 1/2 – 1 tablespoon Maldon Sea Salt
Blue Candy:
• 25g butter
• 135g sugar
• 1 1/2 tablespoon water
• 1 teaspoon vanilla sugar
• Blue food coloring
Sea Salt:
• 1 tablespoon Maldon Sea Salt

How to:
Basic popcorn:
- Heat the oil in a heavy-bottomed saucepan.
- Add the kernels. Put the lid on the pan and lower the temperatur to medium heat.
- As soon as the popcorn starts popping shake the pan a couple of times until there is 3-4 seconds between the pops.
- Remove the pan from the heat and remove the lid to avoid the popcorn from getting wet from the damp. Season with sea salt.
Caramel Popcorn:
- Make one portion of basic popcorn.
- Melt the sugar slowly over medium heat. Stir occasionally.
- Once melted and golden brown, stir in the butter.
- Remove from the heat and stir in the baking soda. This will make the caramel foam up a bit and make it easier to combine with the popcorn.
- Add popcorn and stir well until most popcorns are covered with caramel.
- Let the popcorn cool on a baking sheet covered with baking paper before serving.
Chocolate Popcorn :
- Make one portion of basic popcorn.
- Immediately after the popcorn is ready and taken from the heat, add the finely chopped chocolate and stir until the chocolate has melted and the popcorns are covered.
- Season with Maldon Sea salt.
Make the Blue Candy Popcorn :
- Make one portion of basic popcorn.
- Melt butter and sugar in a saucepan over medium heat until the sugar has melted.
- Add water, vanilla sugar and food coloring. Stir until combined.
- Pour over the popcorn and stir. Leave to cool on a baking sheet covered with baking paper.
Make the Sea Salt Popcorn:
- Make one portion of basic popcorn.
- Add Maldon Sea Salt. Serve warm or cold.
