There are countless recipes for this delicious little bun and trust me we have baked and tasted MANY! But one that always remains on our top 10 list is the Classic Cinnamon Bun. If you feel that you absolutely do not agree, it may be because you have been so unlucky to get one that is dry and almost a little it tough. And totally agree, they are not very good. But, if you stick to a few tips, it is actually quite easy to succeed with your buns.
The secret to get delicious and juicy cinnamon buns is:
1. Do not melt the butter for the dough. It should be soft and worked into the dough.
2. Work the dough for a long time. Preferably in a standmixer.
3. Don’t cheat with the resting time. It takes time, so prepare to wait.

Recipe
You will need:
Dough:
• 50 g fresh yeast
• 500 g milk
• 1 tbsp cardamom
• 135 g caster sugar
• 125 g butter (room temperature)
• 1 egg
• ½ tsp salt
• 600-700 g all purpose flour
Filling:
• 175 g butter (room temperature)
• 90 g cane sugar
• 1 ½ tbsp cinnamon
Egg brush and decoration:
• 1 egg
• Pearl sugar

Perfect for freezing and then just thaw in the oven or microwave before serving.
How to:
Dough:
1. In a bowl of a stand mixer, crumble the yeast.
2. Heat the milk till it gets finger-warm.
3.Mix a little bit of the milk with yeast and make sure that yeast is dissolved.
4. Add rest of milk, cardamom, sugar, egg and half of the flour.
5. Work the dough, using the dough hook in standmixer for a couple of minutes.
6. Add butter and rest of the flour and work the dough for another 6-8 minutes.
7. Add salt the last minute. Let the dough rest for 45-60 minutes.
Filling:
8. Mix butter, cane suger and cinnamon until smooth. Set aside.
Assemble:
9. Divide the dough into two on a floured table.
10. Roll out each portion into a large rectangle.
11. Spread with half of the filling.
12. Roll it into a log lengthwise and slice into 3cm thick slices.
13. Put slices into a baking pan (as on picture) or into paper cake moulds.
14. Cover with a cloth and leave to rise for 60 minutes.
16. Preheat the oven to 200 degrees.
17. Lightly brush buns with beaten egg. Sprinkle with pearl sugar.
18. Bake in the middle part of the oven for about 10-12 minutes or until golden brown.
