This combination is a classic but still so incredibly good and we are big fans! The salad is delicious, crispy, cheap and healthy. Perfect for both the Christmas table and as a simple side dish for dinners throughout the winter. What more is there to say, than bon appetite!
Recipe
You will need:
For the salad:
• 360 g red cabbage
• 200 g apples
• 50 g leeks
• 100 g hazelnuts
For the dressing:
• 2 tbs rapeseed oil
• 1 tsp honey
• 1 1/2 tsp apple cider vinegar
• 1 tsp Dijon mustard
• salt and pepper
• 1 tsp honey

Tip!
You can of course use almonds or walnuts insted of hazelnuts.
How to:
- Dry the hazelnuts on a hot pan until the shells are dark but not burnt. Rub the nuts between a kitchen towel until the scales have fallen off.
- Finely chop the cabbage.
- Cut the apples into thin boat-shaped slices.
- Cut the leeks into thin, fine strips (julienne).
- Mix all ingredients for dressing. Season with salt and pepper.
- Mix the red cabbage, apple slices and leeks together with the dressing and garnish with hazelnuts.
- Serve the salad in a leaf from the red cabbage head.
