Inspired by Rosa and her family’s visit to Frydenlund Fruit Planation, our two families have been battling in creating recipes with apples. It’s so much fun to come up with recipes based on one ingredient, especially if you let the kids be a part of the progress. They all came up with some pretty good ideas that we can definitely work on. Some of their ideas were apple pancakes, apple chips, apple ice cream and apple smoothie – you get the picture, right? Sweet and tasty!

So, with our heads filled with ideas for new apple recipes, guess we’ll have to pay the old fruit plantation a few more visits.

This time, however, and to our kid’s big disappointment, we didn’t end up cooking pancakes or making chips. Instead, we made this delicious and healthy Apple Granola with Cinnamon. And the result was so good! The sweetness from the apples really makes this granola extra tasty. When it comes to the different kind of nuts, feel free to use the ones you have at hand.

We prefer to eat the Apple Granola with Cinnamon with Greek yogurt and fresh blackberries.

Recipe

You will need:

• 2 small apples
• 3 dl / 40 g oatmeal
• 1 dl / 50 g cashew nuts
• 1 dl / 50 g almonds
• 1 dl / 65 g sunflower seeds
• 1 dl / 65 g sesame seeds
• 3 tbsp coconut oil
• 2 tsp cinnamon
• 3 tbsp honey
• A pinch of salt

How to:

  1. Preheat the oven to 150°C / 300°F.
  2. Peel and cut the apples into small pieces.
  3. Mix oatmeal, apple pieces, nuts and seeds on a baking tray with baking paper.
  4. Drizzle over with honey. Sprinkle with cinnamon and a pinch of sea salt.
  5. Add small chunks of coconut oil and blend everything well.
  6. Roast the granola in the oven for about 50 minutes (turning it halfway) until golden brown.
  7. Let the granola cool completly.
  8. Store in an airtight container at room temperature for 1 to 2 weeks.
