If you don’t associate asparagus pie with something your kids will like, then you should try this one!
Our children absolutely love it and at the same time, it’s a sight for sore eyes when it’s served with a delicious salad or as part of a nice Easter buffet.

Asparagus Pie

Recipe

You will need:

8 PERS.

Dough:
• 1 dl / 0,5 cup graham flour
• 2 dl / 1 cup wheat flour
• 125 g cold butter
• 1 tbsp. cold water

Filling:
• 3 eggs
• 6 tbsp. sour cream
• 2 tsp. Dijon mustard
• 100 g grated cheese
• 600 g green asparagus

How to:

1. Divide the butter into small cubes and mix it quickly with the flour.
2. Add the water to bind it together.
3. Press out into a buttered tart dish and let it rest in the fridge for approx. 30 minutes.
4. Punch holes in the dough with a fork.
5. Bake the pie dough for 10 minutes in the middle of the oven at 200° C / 400° F.
6. Rinse and cut off the lower part of the asparagus.
7. Stir all the ingredients for the filling together except for the asparagus.
8. Pour the filling into the pre-baked pie crust.
9. Carefully place the asparagus evenly on top.
10. Sprinkle with grated cheese.
11. Bake the pie in the middle of the oven for about 25-30 minutes, until it has a nice golden brown color and the filling has settled.
