Even though it looks like so much more, this is just a simple cupcake. Ok we did fill and decorat them with marshmallows and toffees. But still – it is just a cupcake. Of coures you can choose to bake them as ordenary cupcakes, in paper muffin cases, but we think they just look so mutch nicer and sweeter when you serve these little goodies in a jar.

Recipe

You will need:

2 eggs
2oo g caster sugar
1 tsp vanilla
100g butter
200g milk
180 g all purpose flour
40 g cocoa
2 tbs baking powder
1 pinch of salt
20 butter toffee candies
miniature marshmallows
1 cup whipping cream

TIP!

If toffee is to sweet for you, use dark chocolate instead.

How to:

1. Preheat the oven to 175 C (340 F).

2. Beat eggs, caster sugar and vanilla sugar really fluffy.

3. Melt the butter and stir in the milk. Mix it into the egg mixture.

4. In another bowl mix flour, baking powder, cocoa and salt. Add the dry ingredients to the batter and carefully beat until combine.

5. Fill small maison jars (or paper muffin cases) 3/4 full with batter.

6. Press marshmallows and two toffee candies in each jar/muffin case. Bake for about 12-15 depending on the size of your jar.

7. Let cool. Whip the cream and decorate the cakes with cream, chopped toffee candies and mini marshmallows.  Serve and enjoy.
