It’s chanterelle (or as they are called in Sweden “gold of the forest”) season. Which means it’s season for these beautiful yellow mushrooms that can luxuriate everything from pasta to pizza. What’s not to like?
But of all the delicious things you can make with “gold of the forest”, one of our favorite chantarelle recipes is this simple classic – chanterelles fried in butter with cream and served on a slice of toasted sourdough bread. So easy and so insanely good! If you haven’t tried it yet, this is a must try recipe.

Nice to know: Cleaning your mushrooms can be a quite time killer and you’ve probably heard that you should brush them instead of rinsing them under water. But because chanterelles has a fairly firm texture they won’t lose their taste when rinsed under water.
Recipe
You will need:
Serves 2
• 200 g chanterelles, cleaned
• 1 onion, finely chopped
• 1 clove of garlic, finely chopped
• 2 tbsp butter
• 50 ml heavy cream
• Salt & pepper
• Parsley, finely chopped
• 2 slices of sourdough bread
Tip!
Add grated Parmesan – deliciously good!
How to:
- Fry the chanterelles on a dry frying pan until all the liquid has evaporated.
- Add butter, onion and garlic and leave to fry until the chanterelles and onions are golden brown – about five minutes.
- Add the cream and chopped parsley (save some for decoration) and stir quickly. Season with salt and pepper.
- Toast the bread and top with the chanterelles.
- Decorate with chopped parsley and serve right away.
