Tasty Cheese & Dill Muffin Bread – The perfect bread for your crayfish party.
It’s a must to serve some kind of bread with crayfish. A good sourdough bread, crispbread or even something as classic white bread works really well. But these lovely and rich Cheese & Dill Muffin Bread, are something out of the ordinary and actually work great for any occasion.
They are super easy to make and because they are baked in muffin-tins, they are great on a buffet or to bring along for a picnic.
You can also vary them, by replacing dill with thyme, oregano or sun-dried tomatoes.
Recipe
You will need:
• 150 g wheat flour
• 120 g spelt flour
• 1 tsp. salt (preferably flaky sea salt)
• 2 tsp. baking powder
• 2 eggs
• 45 g oil
• 150 g plain yogurt
Filling
• 100 g grated cheddar
• 1/4 cup of chopped dill
How to:
- Mix the dry ingredients in a bowl.
- Add eggs, oil and yogurt. Stir until comibined.
- Add almost all of the cheese (keep some for later) and all of the dill. Stir so that it mixes well into the batter.
- Distribute the batter evenlyin between 9 large or 12 small baking cups placed into a muffin plate.
- Sprinkle with the rest of the grated cheese.
- Bake for 20 minutes in a preheated oven, 200C / 390F until the breads are golden brown.
