Last week we had the most fantastic weather here in Copenhagen and weather like that calls for ice cream! This recipe for coconut & chocolate ice cream is really easy to make and the kids will love to get involved.
The base of the recipe can be varied in endless ways – try for example to make it with espresso, fresh strawberries or banana & chocolate. We have tried them all and let’s just say it’s hard to choose a favorite!
TIP!
Do not have an ice cream maker? Then freeze the cream in a freezer bag. When it starts to get hard take out the bag and knead it to prevent large ice crystals. When it starts to become difficult to knead, cut a hole in the bag and press it into a container.
Recipe
You will need:
• 2 cups of whipping cream
• 1 cup of milk
• 3 whole eggs
• 100 g of sugar
• The grains from a vanilla bean
• 1/2 desiccated coconut
• 100 g dark chocolate (roughly chopped)
How to:
- Mix everything except for the coconut and chocolate together in a saucepan and warm it up slowly to 85 degrees. Exactly! If you do not have a meat thermometer, take it as soon as it is clear creamy and the first boiling bubbles start to appear. If it boils, it is destroyed.
- Pour the cream into a bowl and let the cream cool.
- Add the desiccated coconut and roughly chopped chocolate.
- Pour the cream into an ice cream maker to freeze the ice in.
- Scrape off the ice into a container that can go into the freezer.
