Swedish Crayfish Salad is both simple and crazy good. In fact, it’s so good that we not only serve it as an appetizer but also occasionally as a luxurious lunch. When we do so, we make sure to add extra Crayfish Salad and serve it with a simple green salad on the side. Preferably with a glass of white wine or Champagne.
Recipe
You will need:
Serves 4 as an appetizer (or 2 as lunch)
• 170 g crayfish tails
• 1 dl / 0,5 cup sour cream
• 1dl / 0,5 cup mayonnaise
• 15 asparagus
• Dill
• Salt and pepper
• Lemon, slices
• 50 g spinach
• 4 pieces of toast bread
Tip!
To make it look more exquisite when serving it as an appetizer, cut the bread into round shapes with the help of a glass.
How to:

Rinse the spinach and allow it to dry while you prepare the rest.

Cut off the dry part of the asparagus and cook it lightly in salted water. Save some whole asparagus for decoration and cut the rest into small pieces.

Roughly chop the crayfish tails.

Mix sour cream, mayonnaise, crayfish tails, chopped dill and asparagus in a bowl. Season with salt and pepper.

Roast the bread or fry it in butter. Place the bread on a plate. Cover the bread with spinach and top with the crayfish salad.

Decorate with whole asparagus and lemon slices.
