These Easter Coconut Macaroons are just as simple to make as they are sweet and tasty. It’s such a fun little easter project and the kids can easily help make them (the shape doesn’t need to be perfect), but they might need a little help to apply the goji berries for the bird’s beaks.

Recipe
You will need:
Makes 10
• 50 g butter
• 2 eggs
• 1tsp vanilla sugar
• A few drops of lemon juice
• 1 tbs. cream
• 1 tbs. honey
• 5,5 dl / 2 cups coconut flakes
Decoration:
• 10 goji berries
• Dark chocolate or chocolate sauce
How to:
- Heat the oven to 175C / 350F.
- Melt the butter and let to cool.
- Mix eggs, vanilla sugar, lemon juice, cream and honey.
- Add coconut flakes and butter. Stir until combined.
- Let rest for 10 min.
- Make 10 egg shaped macaroons.
- Bake for 10 min until lightly golden.
- Directly after they have been baked, make a small hole with help of a toothpick and add a goji berry on each macaroon.
- Let cool completely.
- Melt some dark chocolate or just use chocolate sauce to make the eyes. Use a toothpick so that you don’t get to much chocolate.
