Recipe
You will need:
• 1 lb (450g) ground beef or lamb (a mix of both works well too)
• 1/2 cup breadcrumbs (preferably Panko)
• 1 large egg, lightly beaten
• 1/4 cup crumbled feta cheese (optional)
• Zest of one lemon
• 2 cloves garlic, minced
• 2 teaspoons dried Herbes de Provence
• 1/2 teaspoon ground cumin
• 1/2 teaspoon ground coriander
• Salt and freshly ground black pepper
• Olive oil, for frying
How to:
- In a large mixing bowl, combine the ground meat, breadcrumbs, beaten egg, crumbled feta, minced garlic, dried Herbes de Provence, lemon zest, ground cumin, ground coriander, salt, and black pepper.
- Gently mix all the ingredients until well combined, but avoid overmixing to keep the meatballs tender.
- Shape the mixture into meatballs of your preferred size. Traditional Greek meatballs are usually small, about the size of a walnut.
- In a large skillet, heat enough olive oil over medium heat to coat the bottom of the pan.
- Add the meatballs to the skillet in batches, making sure not to overcrowd them. Fry until they are golden brown and cooked through, turning them occasionally for even cooking. This should take around 5-7 minutes per batch.
