These Healthy Date and Raspberry Bites are perfect for the kids lunchboxes or when needed, as a quick energy-boost in the afternoon.

Not only do they taste good, but there is also a small surprise in the middle, in the form of a fresh raspberry. The kids will love it!

The freeze-dried raspberries in which they are rolled (we’ve used ODENSE freeze-dried raspberries ) enhance the raspberry flavor. But if your kids think it’s a little too sour, just swap it with grated coconut.

Recipe

You will need:

• 200 g dates
• 60 g oatmeal
• 1 tsp vanilla sugar
• 3 tbsp cocoa
• 4 tbsp water
• Raspberries

Decoration:
• Freeze-dried raspberries

Tip!

You can also try to fill and cover your date balls with roasted hazelnuts. Use a whole nut in the middel and finely chopped nuts as decoration.

How to:

  1. Mix all ingredients except the raspberries in a food processor.
  2. Let the food processor run until you have a smooth batter.
  3. Take a dollop of batter and flatten it a little in your hand.
  4. Place a raspberry in the middle and carefully hem the batter around the raspberry and shape into a round ball.
  5. Mix or mortar the freeze-dried raspberries into a slightly more finely ground powder. Roll the date ball in the powder. Make sure it is all covered.
  6. Continue with the rest of the batter.
  7. Store in the refrigerator.
