My kids just love pancakes. So we eat pancakes often. Like VERY often. Probably too often. The good thing is that I’ve got plenty of great pancake recipes which I’m of course going to share with you.

The recipe I’ve choosen for today to celebrate the International pancake day is an healthy and extremely easy way of doing pancakes. I use this version of pancakes for our Sunday brunches or whenever the kids need a quick snack. Serve them with fresh berries and some maple syrup or honey.
