There are so many delicious things to do with Oreo’s biscuits. Smoothies, ice-cream, pop cakes, birthday cakes, muffins, I could go on and on. I promise we will create some lovely Oreo based recipes for all you readers here on the blog. But we need to  start somewhere and we have chosen these tasty Oreo cupcakes. This recipe will give you 12 regular sized cupcakes but of course you can choose to make really large ones or small ones. Just remember to adjust the baking time.

Recipe

You will need:

Dough
3 eggs
250 g caster sugar
1 tsb vanilla powder
50 g butter
100 g sour cream
1 tbsp cold coffee
190 g all purpose flour
2 tsb baking powder
4 tbsp cocoa powder
1 pinch of salt
50 g chocolate 70%, chopped

Frosting
60 g butter, softened
450 g icing sugar
120 g sour cream
1 tsp vanilla powder
6 Oreo biscuits

To decorate
6 Oreo biscuits divided in two or 12 mini Oreo´s

TIP!

It’s a good idea if all your ingredients are room temperature before you start to bake.

How to:

Cupcakes
1. Preheat oven to 175C. Line a muffin tin with 12 paper muffin cases. Place one Oreo biscuit into the bottom og each case.

2. Beat eggs, sugar and vanilla powder until light and fluffy. Melt the butter and mix it with sour cream and coffee. Stir into the egg mixture.

3. Mix flour, baking powder, cocoa powder, chopped chocolate and salt. Add the dry ingredients to the batter and carefully beat until combined.

4. Divide the batter evenly between the prepared liners and bake for about 15-17 minutes. Let cool completely.

Frosting
5. Place the six large Oreo´s into a food processor and whizz into crumbs. Alternative, place the cookies into a plastic food bag and smash with a rolling pin. Set aside.

6. Beat softened butter until smooth. Add icing sugar and vanilla powder and whisk smooth. At last add sour cream and whisk to a fixed smooth frosting.

Decorate
7. Fill a piping bag fitted with a tip and then pipe frosting on top of the cupcakes. Finish with a half or a min Oreo.
