This combination is a classic but still so incredibly good and we are big fans! The salad is delicious, crispy, cheap and healthy. Perfect for both the Christmas table and as a simple side dish for dinners throughout the winter. What more is there to say, than bon appetite!

Recipe

You will need:

For the salad:

• 360 g red cabbage
200 g apples
50 g leeks
100 g hazelnuts

For the dressing:
• 2 tbs rapeseed oil
• 1 tsp honey
• 1 1/2 tsp apple cider vinegar
• 1 tsp Dijon mustard
• salt and pepper

Tip!

You can of course use almonds or walnuts insted of hazelnuts.

How to:

  1. Dry the hazelnuts on a hot pan until the shells are dark but not burnt. Rub the nuts between a kitchen towel until the scales have fallen off.
  2. Finely chop the cabbage.
  3. Cut the apples into thin boat-shaped slices.
  4. Cut the leeks into thin, fine strips (julienne).
  5. Mix all ingredients for dressing. Season with salt and pepper.
  6. Mix the red cabbage, apple slices and leeks together with the dressing and garnish with hazelnuts.
  7. Serve the salad in a leaf from the red cabbage head.
