Finally, it’s “staying indoors and eating all the chocolate cake you can eat” season. And we LOVE it!!
This cake might seem to have many steps – but don’t let that stop you, as none of them are hard and the result is an absolutely delicious and rich chocolate cake that’s going to last just a little bit longer, as it’s almost impossible to eat large pieces of it.
If you still think there are too many steps, skip the frosting and serve the chocolate Cake only with glaze – it still tastes amazing.

Recipe

You will need:

Cake:
• 200 g all-purpose flour
• 125 g granulated sugar
• 50 g brown sugar
• 25 g cocoa
• 1/2 teaspoon baking soda
• 1/2 teaspoon baking powder
• A pinch of salt
• 2 eggs
• 50 ml sour cream
• 1/2 tablespoon vanilla sugar
• 100 g butter
• 50 ml sunflower oil
• 150 ml cold water

Frosting:
• 100 g dark chocolate 70%
• 125 g butter
• 125 g icing sugar
• 1/2 tablespoon vanilla sugar

Glaze:
• 25 g butter
• 90 g powdered sugar
• 2 tbsp cocoa
• 1 tsp vanilla sugar
• 2 tbsp milk

Decoration:
• Figs and chopped almonds

How to:

  1. Preheat oven to 180C / 350F
  2. Lubricate and powder a 1.5 l cake pan evenly with wheat flour. We used the Classic Fluted Loaf Pan 1.4 liters.
  3. Mix all dry ingredients except for vanilla sugar in a large mixing bowl.
  4. In another bowl, whisk egg, sour cream and vanilla sugar.
  5. Add the dry ingredients into the batter.
  6. Melt butter and mix it with oil and water.
  7. Add the mix to the batter and stir until combined.
  8. Pour the batter into the cake pan and bake for 40-45 minutes.
  9. Leave to cool for 15 minutes before removing from the baking pan.

Frosting:

  1. Melt chocolate in a bowl over hot water.
  2. Add butter, icing sugar and vanilla sugar.
  3. Stir until smooth.
  4. Divide the cake in two.
  5. Spread or pipe the bottom cake with frosting. Gently place the top of the cake on top.

Glaze and decoration:

  1. Melt the butter.
  2. Mix icing sugar, cocoa and vanilla sugar.
  3. Stir in the milk and then the butter. Stir until you get a shiny and smooth glaze.
  4. Gently cover the cake with the glaze and decorate with figs and chopped almonds.
