International Waffle day is fast approaching (March 25th) and we use that as an excuse to make PLENTY of waffles. Both some good old classic waffles and some more alternative ones.

It’s impressive how something so simple can be so insanely good. Waffles always seem to be appreciated by both kids and adults. Our children’s favorite is without a doubt the classic waffles served with jam and whipped cream. But a healthier Banana Breakfast Waffle is definitely also a hit and something that is regularly snuck into the lunchboxes.

However, these Spinach Waffles with Smoked Salmon are definitely at the top of our list, when we get to choose waffles for ourselves. They are perfect both for lunch or as a delicious dinner together with a glass of white wine.

Recipe

You will need:

For 8 waffles:

• 150 g fresh or frozen spinach
• 100 g butter
• 4 dl / 240 g wheat flour
• 2 tsp baking powder
• 1/2 tsp salt
• 4 1/2 dl milk
• 2 eggs

For the topping:

• 8 slices of smoked salmon
• 1.5 dl sour cream 18%
• 8 lettuce leaves
• 2 avocados, sliced
• 100 g bleak roe
• 1 red onion, chopped
• 1 pot dill, chopped

How to:

  1. Mix all the ingredients for the waffles in a food processor until mixed well.
  2. Leave the batter to rest for 30 minutes.
  3. Ladle batter into a preheated waffle iron. Cook until lightly brown and crispy.
  4. Serve the waffles with the topping.

Tip!

Divide the waffles into smaller parts, top with salmon, sour cream etc. and serve as a starter or on a buffet.
