If you follow any media at all you have most likely heard about Super foods. But to be honest, do you know what it is, except that blueberry is supposed to be one of them?
To put it briefly, super food is food that is considered to be very good for your health and it may even help some medical conditions. It is food with a high content of essential nutrients like vitamins, minerals, antioxidants, amino acids and fatty acids. Sounds good, right?
So what else except for blueberries is super food?
The list is long, but to name a few more besides for blueberries:
- Goji berries
- Spinach
- Quinoa
- Raspberries
- Beets
- Walnuts
- Avocado
- Olives
- Parsley
- Kiwi
- Kale
- Flaxseeds
- Figs
- Green tea
- Salmon
Now you probably think:
-Ok, that’s doesn’t seem too complicated.
And it’s not. The complicated part is when you are tired and want to make a quick dinner for your family and yourself. The last thing you want to think of is if the ingredients in front of you are Super foods or not.

Recipe
You will need:
• 300g beets
• 450g chicken breast tenderloins
• 250g halloumi
• 2 avocado (sliced)
• 4 figs (cut into quarters)
• 100g baby spinach (rinsed)
• 50g walnuts (chopped)
• olive oil
• salt
• pepper
• crème di balsamic
How to:
- Boil the beets till soft in slightly salted water. Let the root tip and a little of the tops remain as that retains the flavour better.
- Rinse them under cold water and rub off the skin. Divied the beets into small pieces.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for 5 to 6 minutes or until chicken is tender and no longer pink, turning once. Season with salt and pepper.
- Cut the chicken into slices.
- Slice halloumi into 1cm thick slices. Brush with olive oil and fry in a large skillet over medium- high heat.
- On a large plate, mix beets, baby spinach, avocado, chicken, halloumi and figs.
- Sprinkle chopped walnuts and drizzle crème di balsamic over the salad.
