What could possible be better than sweet homemade heart-shaped cookies filled with red raspberry jam for Valentine’s Day? And they are as simple as good!
This is a perfect opportunity to have a good time and being creative with the kids in the kitchen, because if you don’t have a heart-shaped cookie cutter, we promise that the cookies taste just as good round or star-shaped. Or in a completely different shape….

Recipe
You will need:
• 5 dl / 2 cups wheat flour
• 1 dl / 0,5 cup cane sugar
• 1 teaspoon vanilla ekstrakt
• A pinch of salt
• 200 g cold butter cut into cubes
• 1 egg yolk
•1 1/2 dl/1 cup of raspberry jam
Decoration:
• Powdered sugar
Tip!
Don’t have any cookie cutter? Use a glass and make round cookies. The taste will be the same 🙂
How to:
- Whisk together flour, sugar, vanilla ekstrakt and salt.
- Add butter and combine until it resambles bread crumbs.
- Add egg yolk and mix dough quickly until it just comes together.
- Leave in the fridge for about 30 minutes.
- Set the oven to 175 C/325 F.
- Roll out the dough about 2-3 mm thick.
- Cut out cookies with a heart shaped cookie cutter.
- Place the cookies on a baking tray lined with baking paper.
- Cut out a small heart on half of the cookies. These will be the top on the cookies.
- Bake for about 10 minutes, until the cakes are slightly golden brown.
- Let cool completely.
- Add a click of jam to the center of each bottom cake and spread it out.
- Put the top on – the cookie with a small heart cut out.
- Sprinkle with powdered sugar.
