These Banana Breakfast Waffles are kind of similar to our oat-banana pancakes. In addition to being insanely delicious as breakfast, they are also perfect in the lunchbox.
A while ago we borrowed a Tefal waffle iron with a lot of fun features. The idea was, that we would make wafers and bricelets. But as the fruit basket were filled with over ripped bananas, plans changed and these Banana Breakfast Waffles came about instead. And good for us, because they turned out to be a big hit on the breakfast table as well as in the lunchbox along with lots of fresh berries.
Here the BananaBreakfast Waffles are served with a fantastic tahini & ginger sauce and Greek yogurt. And no, the sauce was not a hit among the kids but heavenly good if you ask us. We got the inspiration for the sauce from Urtekram.
Recipe
You will need:
• 150 g ground oatmeal
• 150 g wheat flour
• 2 tsp baking powder
• 3 eggs
• 50 g butter
• 2 1/2 dl milk
• 2 large banana
Tahin/ginger sauce
• 2 tbsp light tahin (dark also work but becomes more sharp in taste)
• 1 tbsp honey
• 1/2 tbsp grated ginger
• 1 tbsp water
• Greek yoghurt
• Fresh berries
How to:
- Blend the oatmeal into a fine flour. Mix oatmeal, wheat flour and baking powder.
- Mash the bananas and melt the butter.
- Add the eggs, melted butter, milk and mashed bananas to the flour mixture. Stir well. Leave to rest for 30 minutes.
- Ladle batter into a preheated waffle iron. Cook until lightly brown and crispy.
Tahin/ginger sauce
- Mix all the ingredients for the sauce until combined.
- Add a little more water if it feels too thick.
- Serve the waffles with Greek youghurt, fresh berries and tahin/ginger sauce.
