This is so good! Like CRAZY good!!! Granola, vanilla ice cream and chocolate in a delicious crunchy and sweet mix. And yes, it’s the same healthy granola cups as in our Granola Breakfast Pie! Just add vanilla sugar instead of cinnamon. – Be sure to make a double portion so that you can quickly make both a healthy breakfast and a delicious dessert. Smart, right?


Recipe
You will need:
• 4 dl / 2 cup oatmeal
• 1 dl / 0,5 cup almonds, chopped
• 0.5 dl / 0,25 cup hazelnuts, chopped
• 0.5 dl / 0,25 cup pumpkin seeds
• 1 teaspoon vanilla sugar
• A pinch salt
• 50 g butter
• 4 tablespoon honey
Filling:
• 100g dark chocolate, 70%
• Vanilla ice cream
• Chocolate sauce
• Nut Crunch
How to:
- Heat the oven to 150C / 300F.
- Mix all dry ingredients in a bowl.
- Melt the butter. Add honey. Mix together with the dry ingredients.
- Butter a 6 cups muffin pan.
- Divide the granola mixture between the 6 cups and press up the mixture along the edges to form a cup.
- Bake until golden brown – approx. 30 min.
- Let cool.
- Melt the dark chocolate over water bath or in a microwave.
- Brush the inside of each granola cup with the melted chocolate.
- Let set.
- Fill with a scoop of vanilla ice cream, top with chocolate sauce and sprinkle some Nut Crunch on the top. Serve immediately.
