All our children have their own lunch box with them to school and kindergarten every day, and we must admit that there at times is a total lack of ideas as to what to put into them. The ideal food and snacks are somethings that they like, are healthy and still looks inviting after being shaken well in the backpack.
It often ends up with the classics; wraps, rye bread sandwiches, pasta salad, fruit and vegetables cut into pieces. Most days, the kids are content with that. But sometimes there is a big desire for it to be filled with cookies and sweets – just like all their friends… Right! 😉 However, that’s not gonna happen, so over the years we have managed to find some good alternatives to put in the lunchboxes for a bit of an upgraded.
Our healthy orange chocolate truffles is one alternative that our kids love and they are filled with healthy and energizing ingredients. Another great alternative, that always excites the children, are these delicious & healthy Energy Bars. They are also great to bring for an outing, and has saved us a number of times when the energy level has dropped.
Recipe
You will need:
• 2 dl / 1 cup oats
• 2 dl / 1 cup quinoa, raw
• 1 dl / 0,5cup cashew nuts, chopped
• 1 dl / 0,5 cup sesame seeds
• 3 tbs chia seeds
• 2 dl / 1 cup peanut butter
• 1 dl / 0,5 cup honey
• 1 tsp cinnamon
• 1 teaspoon vanilla powder
• a pinch of salt
• 100 g dark chocolate (70%)
How to:
- Heat oven to 175C / 350F.
- Mix oats, quinoa, cashew nuts, sesame seeds and chia seeds on a baking tray lined with baking paper.
- Roast for 10 min. Let cool.
- Melt peanut butter and honey in a saucepan. Leave to cool a little.
- Add cinnamon, vanilla powder and salt.
- Add the roasted dry ingredients and stir well so that everything is covered with the peanut / honey mixture.
- Finally, add the chopped chocolate and mix quickly avoiding that the chocolate melt.
- Press the batter out into a mold (10 x 30cm) covered with baking paper.
- Let cool in refrigerator for at least a couple of hours before cutting into energy bars.
- Store in a refrigerator or preferably in the freezer.
