Being wonderfully spoiled and courted by your own family is the very best thing there is – and we don’t mean with diamonds and pearls. What we mean is, when you get to stay in bed, listening to sneaking feet, whispers, giggles and clinking glasses and cups. And then, be surprised with breakfast in bed and homemade gifts made with love. That’s the perfect recipe of a Mother’s Day – if you ask us!

Not because breakfast in bed has to happen on Mother’s Day. But the fact that the calendar tells us it’s Mother’s Day, reminds the rest of the family to take the initiative for this appreciated courtship to actually happen.

When we once in a while get served breakfast in bed (like once a year) it normally consists of rolls, cheese, marmalade, juice, coffee and maybe a boiled egg. Definitely not fancy, but again it’s the very thought it self that counts.

But, if we were to wish for a little more luxurious version – this vegan brunch is what would be on the menu:

  • Green vitamin smoothie with spinach and fresh mint
  • Overnight chia with sweet kiwi
  • Toasted sourdough bread with avocado and chili flakes
  • And coffee, of course!!

Recipe

You will need:

Healthy smoothie with spinach and fresh mint:
• 60 g spinach, frozen
• 1/2 cucumber
• 100 g pineapple
• 1 green apple, peeled
• 1 tsp ginger, grated
• 1/2 lime, squeezed
• 1 tbsp honey
• Fresh mint
• Cold water

Overnight chia with kiwi:
• 2 tbsp chia seed
• 200 ml soy milk with vanilla
• 3 kiwi
• A handfull of raspberry
• Coconut flakes
• Honey

Sourdoughtoast with avocado and chili flakes:
• 2 slices sourdough bread
• 1 large or 2 small avocados
• Vegan mayo
• 1/2 lemon
• Chili flakes

How to:

Healthy smoothie with spinach and fresh mint:

  1. Mix all the ingredients into a smooth smoothie. Add a little cold water for the correct consistency. Serve immediately.

Make the Overnight chia with kiwi:

  1. Mix the chia seeds and soy milk and leave in the fridge overnight.
  2. Peel and blend 2 kiwi fruits, into a beautifully green sauce. The last kiwi is peeled and cut into slices.
  3. When serving, the overnight chia is divided into two glasses. Alternate with kiwi sauce and top with with kiwi slices, raspberries, coconut flakes and honey.

Make the Sourdoughtoast with avocado and chili flakes:

  1. Toast the bread.
  2. Spread a layer of mayo on the bread.
  3. Top the bread with avocado slices.
  4. Squeeze over a little lemon and finally sprinkle with chilli flakes.
