In our last post, Orange Date Dessert with Honey Glaze, we promised you a few more recipes with oranges. So here comes an other favorite of ours – a super simple kale salad with walnuts.

This is a real superfood salad. In addition to being really easy to make and delicious, this salad boosts you with vitamin C, calcium, fibers and antioxidants. In short that means, it strengthens your immune system, your bones, keeps you full for a long time and prevents diseases such as cancer, cardiovascular disease and Alzheimer’s. Quite simply a SUPER SALAD, right? Now, who can resist that?

Simple Kale Salad With Walnuts

Recipe

You will need:

Serves 4

• 150g kale, rinsed and chopped
• 1 tbsp olive oil
• 0,5 tsp Salt
• 2 Oranges
• 8-10 Dates, seedless
• 60g walnuts

How to:

  1. Place the rinsed and chopped kale on a large platter or in a large bowl.
  2. Sprinkle salt over the kale. Squeeze the salt into the salad until it collapses a little. This makes the cabbage more delicious and easier to eat.
  3. Peel and cut the oranges into thin slices.
  4. Slice the dates and chop the walnuts coarsely.
  5. Mix oranges, dates and walnuts with the kale. Drizzle over olive oil and serve.

Did you know?

The content of vitamin C in kale is high, in fact it’s higher than the vitamin C content in an orange. And vitamin C is good when it comes to a well-functioning immune system.
